Day 006: In the kitchen…
Jan 06 2008It’s pretty important to me to have all my lunches pre-made for the week. So today I ran to HEB to pick up some odds and ends. Then I did some chopping and finally I cooked up a huge batch of rice and grilled about 4-5 chicken breasts cut in to strips. The cooking portion took about 3 hours, but for some reason it felt like all day.
I also made a batch of Texas Caviar. I saw the recipe on a co-worker’s blog. It’s a combination of blackeyed peas, onions, parsley, peppers, jalapenos, garlic, and a red wine vinaigrette (olive oil and red wine vinegar). It sounded good, but I have never had blackeyed peas before so that was only thing that had me questioning if I would like it or not, but after trying it I can honestly say I have a new favorite treat. It is very good. Now I just need to find something a little healthier than crackers to eat it on.
If you get a chance swing over and read Brian’s blog. He is training for a triathlons, marathons, and who knows what else. It’s very cool stuff and he’s got some good recipes that are definately worth trying. I guess now I am going to have to try the “super healthy pumpkin bread“, but from the looks of it I better not bring it in to work or he might steal it from me.
It’s been a long day, I got a lot accomplished, and now I am exhausted. Tomorrow I start my resistance training… hopefully.
I am going to go relax and watch the new version of American Gladiators. I used to love the show when I was younger… of course I watched wrestling when I was a kid too. (Doh!) So hopefully it’s as entertaining as I remember.

try baked blue chips. if you can find baked blue chips with flaxseed then you are a rockstar. hey, the last wednesday of every month i’m allowed to bring a friend to workout for free at my gym (you don’t need to sign 10 things & they won’t try selling you a membership either). if you’d like to hook up for a workout later this month or any month just let me know. we can do any combination of things.

Yeah I would love hit the gym with you. Give me till Feb or March to get back in the swing of things.
In NY I had a membership at Bally Total Fitness which kind of sucks. Here the gyms are a lot bigger. So it would be cool to see if they are worth the money for a membership.
